Is the aroma you add to ice-creams processed by alcohol?

    We use both natural and artificially produced aromas in our ice cream. The most common flavor in ice cream is vanilla either as a natural extract extracted from vanilla bean, or as an aroma (natural vanilla or chemically produced ethylvanillin and vanillin). A combination of these is often used to bring out a good vanilla taste.
    In the synthetic production of Vanillin and Ethylvanillin, both Ethanol and propylene glycol are used in the production. Of that process aid, Ethanol, there are only trace
